Changes of Hormone Sensitive Lipase, Adipose Tissue Triglyceride Lipase, and Free Fatty Acids in Subcutaneous Adipose Tissues throughout the Ripening Process of Dry-cured Ham

چکیده
and Implications Changes in adipose triglyceride lipase (ATGL) and hormone sensitive lipases (HSL) in subcutaneous adipose tissue of Xuanwei ham at different ripening stages were studied. Green hams were salted for 40 d and then ripened in a ventilated chamber for 15 months. Adipose triglyceride lipase and HSL could be detected during the whole ripening period of Xuanwei ham, but their protein levels decreased as the ripening time increased. The decrease of lipase proteins could be attributed to the decrease in protein synthesis as ripening time progressed. The level of free fatty acids (FFAs) increased at the first stage but HSL protein remained constant indicating that HSL was more important than ATGL for adipose tissues lipolysis. The main FFAs produced during the ripening period of Xuanwei ham were oleic acid, linoleic acid and palmitic acid, suggesting that the triacylglycerols containing these three FFAs were preferential substrates for ATGL and HSL.

Developmental regulation of hormone-sensitive lipase mRNA in the rat: changes in steroidogenic tissues.
The hydrolysis of triglycerides and cholesteryl esters stored within cells is mediated by the enzyme, hormone-sensitive lipase. In adipose tissue and heart, hormone-sensitive lipase primarily hydrolyzes stored triglycerides to free fatty acids, while in steroidogenic tissues, it principally converts cholesteryl esters to free cholesterol for steroid hormone production. To determine whether horm...
متن کاملThe Association of Omentin Gene Expression in Visceral and Subcutaneous Adipose Tissues with Plasma Fatty Acids Profile and Dietary Fatty Acids
Introduction: Omentin, an adipokine, with anti-inflammatory effects reduces insulin resistance, and can hence, play an important role in prevention of cardiovascular disease and diabetes. The present study aimed to investigate the association of plasma and dietary fatty acids with gene expression of omentin in visceral and subcutaneous adipose tissues. Materials and Methods: Visceral and subcut...

The purpose of the present study was to investigate the context of lipid metabolism research in physical activity, lipolysis, lipolysis hormone regulation and the fate of lipolysis products in exercise, fatty acid transporters, some genes involved in lipid metabolism, effect of resistance activity on lipolysis, adaptations of adipose tissue due to physical activity, lipoproteins and apoproteins...
متن کاملHormone-Sensitive Lipase Knockouts
All treatments for obesity, including dietary restriction of carbohydrates, have a goal of reducing the storage of fat in adipocytes. The chief enzyme responsible for the mobilization of FFA from adipose tissue, i.e., lipolysis, is thought to be hormone-sensitive lipase (HSL). Studies of HSL knockouts have provided important insights into the functional significance of HSL and into adipose meta...
متن کاملEffect of fasting on free fatty acid, glycerol and cholesterol concentrations in blood plasma and lipoprotein lipase activity in adipose tissue of cattle.
Contributing factors in the regulation of triglyceride deposition in and fatty acid release from bovine adipose tissue were investigated. Six Holstein steers were fasted for 9 days and then refed for 41 days. Blood samples from the jugular vein and adipose tissue samples from backfat biopsies were taken during fasting and refeeding periods. Concentrations of plasma free fatty aids, glycerol and...
